Vegan Corn & Chickpea Pizza with Creamy Garlic Tahini Sauce

Ingredients:

Chickpea and Corn Topping:

  • 1 tsp curry powder
  • 1/4 tsp ground turmeric
  • 1/4 tsp sea salt
  • A dash of olive oil

Other Toppings:

  • 2 Roma tomatoes, thinly sliced
  • 1 small red onion, thinly sliced
  • A handful of fresh cilantro, chopped

Garlic Tahini Sauce:

  • 5 tbsp tahini
  • 1 small clove garlic, minced
  • 1.5 tbsp fresh lemon juice
  • 2-3 tbsp water (adjust to reach desired consistency)
  • 1/4 tsp ground cumin
  • Salt and black pepper, to taste

Pizza Crust:

  • 1 lb vegan pizza dough (store-bought or homemade)
  • 1/2 tbsp olive oil, for brushing the crust

Instructions:

1. Prepare the Chickpea and Corn Topping:

  • Drain and rinse the chickpeas thoroughly, then place them in a medium mixing bowl.
  • Add the corn, curry powder, turmeric, sea salt, and a drizzle of olive oil.
  • Toss everything together until the chickpeas and corn are evenly coated with the spices.
  • Set the mixture aside while you prepare the other ingredients.

2. Make the Garlic Tahini Sauce:

  • In a small bowl, combine the tahini, minced garlic, and lemon juice.

  • Layer the pizza with the thinly sliced Roma tomatoes, arranging them evenly across the dough.

5. Bake the Pizza:
