Ingredients:
Chickpea and Corn Topping:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/3 cup corn (frozen or fresh)
- 1 tsp curry powder
- 1/4 tsp ground turmeric
- 1/4 tsp sea salt
- A dash of olive oil
Other Toppings:
- 2 Roma tomatoes, thinly sliced
- 1 small red onion, thinly sliced
- A handful of fresh cilantro, chopped
Garlic Tahini Sauce:
- 5 tbsp tahini
- 1 small clove garlic, minced
- 1.5 tbsp fresh lemon juice
- 2-3 tbsp water (adjust to reach desired consistency)
- 1/4 tsp ground cumin
- Salt and black pepper, to taste
Pizza Crust:
- 1 lb vegan pizza dough (store-bought or homemade)
- 1/2 tbsp olive oil, for brushing the crust
Instructions:
1. Prepare the Chickpea and Corn Topping:
- Drain and rinse the chickpeas thoroughly, then place them in a medium mixing bowl.
- Add the corn, curry powder, turmeric, sea salt, and a drizzle of olive oil.
- Toss everything together until the chickpeas and corn are evenly coated with the spices.
- Set the mixture aside while you prepare the other ingredients.
2. Make the Garlic Tahini Sauce:
- In a small bowl, combine the tahini, minced garlic, and lemon juice.
- Gradually add the water, one tablespoon at a time, whisking continuously until you achieve a smooth, creamy sauce. You want the sauce to be thick, but pourable.
- Stir in the ground cumin, and season with salt and black pepper to taste.
- Set half of the sauce aside for drizzling over the pizza, and reserve the other half for serving.
3. Prepare the Pizza Crust:
- Preheat your oven to 425°F (220°C).
- Roll out the vegan pizza dough on a lightly floured surface to your desired thickness. For a crispier crust, roll it thin; for a chewier crust, leave it slightly thicker.
- Transfer the dough to a baking sheet or pizza stone. Brush the entire surface lightly with olive oil to help it achieve a crispy, golden-brown crust.
4. Assemble the Pizza:
- Layer the pizza with the thinly sliced Roma tomatoes, arranging them evenly across the dough.
- Scatter the spiced chickpea and corn mixture on top, followed by the thin slices of red onion.
- Drizzle half of the garlic tahini sauce over the toppings, saving the rest for later.
5. Bake the Pizza:
- Place the pizza in the preheated oven and bake for 15-20 minutes, or until the crust is golden and crispy around the edges. The chickpeas should also be lightly roasted and slightly crispy.
- Keep an eye on the pizza as it bakes, checking for your preferred level of crispness.
6. Garnish and Serve:
- Once out of the oven, remove the pizza from the baking sheet and let it cool for a minute or two.
- Garnish with freshly chopped cilantro for a burst of color and flavor.
- Drizzle the remaining garlic tahini sauce over the top just before serving, or serve it on the side for dipping.
Tips:
- Customize Your Pizza: Feel free to add your favorite veggies like bell peppers, spinach, or even vegan cheese for extra indulgence.
- Make It Gluten-Free: Substitute the pizza dough with a gluten-free option to make this recipe gluten-friendly.
- Storage: Leftovers can be stored in an airtight container in the fridge for up to 2 days. Reheat in the oven for a crisp finish.
