Ingredients:
For the Donuts:
- 2 1/2 cups all-purpose flour
- 1/2 cup sugar
- 2 1/4 tsp active dry yeast (1 packet)
- 1/2 cup plant-based milk (almond, soy, or oat)
- 1/4 cup water
- 2 tbsp vegan butter or coconut oil, melted
- 1/2 tsp salt
- 1/2 tsp vanilla extract
- Oil for frying (vegetable or canola oil)
For the Glaze:
- 1 1/2 cups powdered sugar
- 2-3 tbsp plant-based milk
- 1/2 tsp vanilla extract
Instructions:
1. Prepare the Dough:
- In a small bowl, heat the plant-based milk and water until warm (but not hot). Stir in the active dry yeast and a pinch of sugar. Let sit for 5-10 minutes until it becomes frothy.
- In a large mixing bowl, whisk together the flour, sugar, and salt.
- Add the melted vegan butter (or coconut oil) and vanilla extract to the yeast mixture.
- Pour the wet ingredients into the dry ingredients, and mix until a soft dough forms.
- Knead the dough on a lightly floured surface for about 5-7 minutes, until smooth and elastic.
- Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for 1 hour or until doubled in size.
2. Shape the Donuts:
- Once the dough has risen, punch it down and roll it out on a floured surface to about 1/2 inch thickness.
- Use a round cutter or glass to cut out donut shapes, and use a smaller cutter to make the donut holes.
- Place the donuts on a baking sheet lined with parchment paper, cover with a towel, and let them rise for another 30 minutes.
3. Fry the Donuts:
- Heat oil in a large pot or deep skillet to 350°F (180°C).
- Fry the donuts in batches for about 1-2 minutes per side, until golden brown and puffed up. Be careful not to overcrowd the pot.
- Remove the donuts and place them on a plate lined with paper towels to drain any excess oil.
4. Make the Glaze:
- In a medium bowl, whisk together the powdered sugar, plant-based milk, and vanilla extract until smooth.
- If the glaze is too thick, add a little more plant-based milk, 1 teaspoon at a time.
5. Glaze the Donuts:
- Once the donuts have slightly cooled, dip each one into the glaze, ensuring it’s fully coated.
- Place the glazed donuts on a wire rack to set for 10-15 minutes.
Tips:
- For a richer flavor, you can add a pinch of cinnamon or nutmeg to the dough.
- If you don’t want to fry the donuts, you can bake them at 350°F (180°C) for 10-12 minutes. They won’t be as crispy but will still be delicious.
- For extra indulgence, top the glazed donuts with sprinkles, crushed nuts, or shredded coconut.
Enjoy your homemade vegan glazed donuts fresh, and share them with friends and family for a sweet treat!
